No-Bake Energy Bites

Hello, lovelies! I'm writing another recipe (mostly because this is my homework for The Collegian)! This quick and easy recipe requires little prep time and no baking. This is a bit of a mix of a granola bar and a peanut butter cookie. This is a snack that passes as healthy but tastes good enough to replace dessert. They make a great treat for in between classes or even for breakfast if you are in a rush. They are also loaded with protein so you can kick those afternoon munchies to the curb, aka when it is 4:00 pm and you’re counting down the minutes until the cafeteria opens for dinner. 

Yields: about 15 

Ingredients
1/2 cup creamy peanut butter
1/3 cup honey
1 tsp vanilla extract
1 cup old-fashioned oats (raw)
6 Tbsp mini chocolate chips

Optional Ingredients
2/3 cup coconut
1 Tbsp flaxseed
1 Tbsp chia seed
4 Tbsp raisins
4 Tbsp M&Ms

Supplies
Mixing bowl
Spoon
Measuring cups
Airtight container

Directions
In a mixing bowl, stir together peanut butter, honey, and vanilla extract. Add remaining ingredients until evenly coated. Transfer mixture to fridge and chill until set (this took me 30 minutes). Remove from fridge. Shape into 1-inch balls. Store in fridge in an airtight container. 

It's seriously that easy!

For those of you who still aren’t quite used to that 7:00 am alarm going off, a little extra boost might be just what you need. This is a low maintenance recipe that requires a small amount of ingredients, but can be changed to add your own twist. I hope you enjoy!
